Every once in awhile I just get a food craving… it doesn’t happen very often, but when it does I just have to make that certain thing. Sometimes, I REALLY just want a reuben! Now, you may not know this.. its not obvious from this blog. But… I’m a vegetarian. YES! I post lots of recipes with meat, because I cook it for my family, but I don’t eat those {ha!} So when I need a reuben, I make this amazing vegetarian reuben sandwich… and its SOOOO good, hits the spot every time! Its not all that different than a regular reuben, but here’s my recipe.
{per sandwich}
2 slices dark rye bread
sliced baby swiss cheese
sliced aged swiss cheese
Sauerkraut 1/2 cup
Thousand Island dressing
butter for toasting bread
Spread butter on one side of each slice of bread. Heat a pan over medium heat. Place one kind of cheese on the non-butter side of the bread, place the sauerkraut on top of the cheese, and then add the second kind of cheese on top. Place the second slice of bread, butter side up on top. {Tip: pre heat the sauerkraut slightly in a pan or mircrowave… it doesn’t always get hot in the sandwich} place the sandwich in the pan and cook on one side until bread is browned, flip and brown other side.
Remove from pan and open up the sandwich. Spread dressing on open sandwich as desired. Close sandwich and enjoy! YUM YUM!!
I love this! SO.MUCH.Sauerkraut!!! When you look at a traditional Reuben Sandwich the meat is the star. Its a good thing I love sauerkraut, because its the hero of this sandwich.
I ate every bite of this sandwich.. I love when I blog a recipe that is my favorite to eat!

I’m vegetarian, too, and now I’m craving a Reuben:) I like to make them with a slice of tomato or even sauteed mushroom sometimes. Yum!

Hey Emily! This reminds me of a recipe my coworker makes- except she uses tofu in place of lunch meat. I’m not a big tofu person, mostly its a texture thing. I never thought of just omitting the meat… the reason I’m into the sandwich is the thousand island!

I recently had at a local natural food store an “almost Reuben“ sandwich. It was pretty much like yours except it had lightly toasted sunflower seeds on it. What a great addition!
I’ll give yours a try this weekend.
