Well, since I’m in China for spring break, eating really authentic Chinese food, I thought I’d share a non-authentic Asian dish that my family loves… Like the classic Chinese buffet – food that is really not at all Chinese, but we love it. These lettuce wrapped spring rolls are a huge hit at our house. I like to serve them with one, or all, of these tasty dipping sauces.
The combination of the crunchy rolls and the crisp lettuce make a great mix of textures. The flavors are pretty great too. The veggies inside and tasty dips make this an explosion of flavor as well.
Here’s what I used… but you really can use any veggies you like. Here’s what I used.
1/2 red pepper – chopped, 1 small bunch spring onions – chopped, 1 bundle string mushrooms, 1 cup bean sprouts, 1 carrot thinly sliced.
Sauteed the veggies in 1 TBS olive oil until just softened. Place a spoonful of veggies on the center of a wrapper and roll. Place on a baking tray while you heat 1/2″ of oil in a fry pan. Heat until water spits when dripped in the oil. Serve wrapped in a lettuce leaf with your favorite Asian dipping sauce.

I made the honey soy dip for our lettuce wrapped spring rolls, but they would be great with any dip you like.
