Throwing a block party {or any party!} this summer? I’ve got a super yummy and easy dish to share with you today. This finger food appetizer is made with great ingredients the whole family will love. My Quinoa Nachos appetizer takes a 30 min. to make and serves 8 as an appetizer or 4 as a side dish. YUM! With all the great ingredients in this Quinoa Nachos Appetizer you can will enjoy serving these to your friends and family almost as much as you love eating them. Read to be the summer party hero?
You will need quinoa, chicken broth, peppers, onions, minced garlic, parsley or cilantro, salsa, chips, sour cream and cheese. First start with the Quinoa Pilaf recipe here. It’s an easy 25 min. recipe that can be eaten as is, or made into these quinoa nacho appetizer.
After you cook the onions, peppers and minced garlic in a bit of olive oil you add the broth. The Swanson Broth in the pilaf recipe really enhances the flavors of the food it’s prepared with. You then cook 1 cup of Quinoa in this veg and broth mix. TruRoots Quinoa is Certified USDA Organic, Non-GMO Project Verified, Gluten Free, Ancient Grains, Whole Grain, most items Sprouted. Here’s the finsihed pilaf, which mades a tasty side dish just as is… OR use this as the base for my quinoa nachos appetizer.
To make the nachos you will need some tortilla chips. I like to use the scoop kind to hold the quinoa. Spoon a bit into each scoop.
Add a dollop of sour cream.

Top your Quinoa Nachos with a bit of cilantro and enjoy! Each chip can be picked up individually, making it a perfect outdoor appetizer finger food. This recipe serves 8-10 as an appetizer. This is about half of the Quinoa made into nachos, so you can make double this with the recipe. Serve within 30 min of making or the chips will be soggy. It was SO so good. My husband and I polished off this plate for lunch when the photos were done. {ha!}
