I first had this crustless egg bake at a friends house and I was thought it was so good… it’s called crustless egg bake, but ACTUALLY, it has a built in crust, but its so so easy!! You mix the crust right into the egg and as it bakes the crust settles to the bottom and bakes up perfectly, every time. I love how easy and simple it is, we eat this both for breakfast, and sometimes for breakfast for dinner {ha!}
It only takes a few minutes to prep, about 45 min to cook and then it’s ready! Just my kind of meal. Like any other egg bake you can customize what veggies you add, but I love broccoli and onions in mine. Sometimes I’ll chop up some cherry tomatoes if I have them, they taste great too. I used some yummy spinach and cheese sausage in this crustless egg bake and the boys loved it.
The only thing that really sets this apart from other egg bakes is that you mix the crust ingredients right into the egg mix. You add the flour and butter right in, yet it tastes like a flour crust. It’s not as crisp as a pastry crust, but the flavor is the same.

Crustless Egg Bake {with a crust!}
Ingredients
- 4 eggs
- 2 TBS melted butter
- 1/2 cup flour
- 1 tsp salt
- 1 1/2 c milk
- 1/4 c onion {finely chopped}
- 1/2 c shredded cheese
- 1 cup broccoli or 1/2 cup chopped spinach
- 1/2 c sausage {or bacon or ham}
Instructions
- Mix together the eggs, butter, flour, and salt {it will be lumpy}. Stir in the milk, onion, cheese, vegetables and meat. Pour all into a greases pie pan { I made a double batch so I used a larger baking dish} Bake at 350 for 35-45 min {until top is just browned}. Let sit 15 min. before serving. serves 4 or double for 8.
Serve it up and enjoy! I always add a but more cheese and veggies than the recipe calls for, so you can play with this recipe to make it perfect for your family.

Fast and easy with little mess and prep time! Next week is my 50th high school reunion and I’m having a couple ladies over the night before for a pajama party!! this would be great to serve the next morning!
