I really love salads!! Pretty much any kinds is good with me… let’s face the facts though, some salads are my un-healthy than a burger {ha} SO.. When a salad tastes amazing AND is full of things that are good for you, I get pretty excited. This best super food salad is just bursting with flavor and foods that are not just good, but SUPER. It was pretty easy to put together as well, I’ll show you how I made it.
Best Super Food Salad-
Can you just see all the amazing ingredients? Roasted brussels sprouts and sweet potato, feta, craisens, mix nuts and seeds on top of a bed of cabbage, spinach and kale. I just topped with a balsamic vinaigrette, but you can use any dressing you like.
Just look at all those colors! It must be good for you!! I tossed the brussels sprouts and sweet potato with a bit of olive oil, then roasted them for about 15 min, or until just browned. Chop the sweet potato small so it will roast quickly.
Those layers! I put it in a clear bowl so you could really appreciate the ingredients. This best super food salad is layered, then tossed before serving with vinaigrette.
Feel free to omit or substitute the ingredients that don’t work for you.
I made sure the roasted veggies were cool before I added them to the salad, but you could serve warm if you like.
Best Super Food Salad
Ingredients
- 6 brussels spouts {cut in half, tossed in a bit of olive oil}
- 1 sweet potato {chopped small and tossed in olive oil}
- 1/2 head cabbage, sliced thin
- 3 cups baby spinach leaves
- 2 cups kale - chopped to bite size
- 1/2 cup crumbled feta
- 1/4 cup craisens
- 1/4 cup mixed nuts and seeds {or just chopped almonds}
- Balsamic Vinaigrette
Instructions
- This will serve 8 as a side salad - 3/4 as a salad meal.
- Roast the brussels sprouts and sweet potatoes on a cookie sheet for around 15 min at 350F. Let cool.
- Place the spinach, kale and cabbage in a large salad bowl. Top with the brussels sprouts, potato and feta, then add the toppings. Toss in the vinaigrette and serve.
