I love rice crispie treats. I mean I could eat-the-whole-pan-love-them! And I’ve pretty much done this before… but you can’t do that very often… so I decided to try and find a healthier alternative to rice crispie treats. And I think I’ve found the answer. These healthy rice crispie treats are pretty tasty. I’ll admit, they don’t really taste like the original, but they are super yummy, crunchy and my kids loved them, so I will call that a WIN!
These healthy rice crispie treats are made with honey and peanut butter {or any nut butter of your choice} and rice cripsies… that’s it! Simple, wholesome and delicious.
Start with three basic ingredients… honey, peanut butter {3/4 cup each} and rice crispies {4 cups}. {you can also subsitute another nut butter}. You will also need a candy thermometer.
Melt 1 TBS of butter in a medium pot. Add 3/4 cup peanut butter and 3/4 cup honey.
Cook over meduim heat and while stirring often, heat to between a soft ball and hard ball on your thermometer. This is about 125C and 250F. You should remove from heat before it gets to the hard ball temp, or you may have really crispy- crispies.
As soon as the desired temp is reached, add the rice crispies and mix well.
Place into a greased 7 x 10″ ish pan. I grease my hands so I can press and not stick. You will need to work fast as it needs to be packed down before it cools.
Completely cool, then cut and serve. These healthy rice crispie treats are full of crunch, flavor and good-for-you ingredients. I hope youre family will enjoy these as much as we did.
