I’ve been doing a lot of experimenting with my Instant Pot, and this Instant Pot Breakfast Casserole was a hit. I made this instant pot breakfast casserole two ways, one with sausage and one with veggies. You can use this basic ideas from this recipe and add any ingredients that you want for a tasty breakfast dish.
I love my double round pan set because I can make TWO different breakfast casseroles at the same time. Veggie for me and sausage for the boys. Both can be cooked in about 35 min. This instant pot breakfast casserole is an easy meal that can be eaten any time of day. I often make egg bakes for dinner and the whole family always eats it all up.
Gather up these totally tasty fresh ingredients… sausage, cheeses, bread, and loads of veggies… you can use whatever you like. I’ve given you exactly what I used in the recipe card below, but this recipe is very easy to adapt to your liking.
Here’s the veggie bake… Each pan has 6 eggs and other ingredients, which makes a perfect 4 person dish. Each pan serves four, so these together will serve eight for a tasty dinner. {or leave leftovers which we love.}
I used this double round instant pot pan set to cook both breakfast casseroles at the same time. Stack the pans and put them in the instant pot…. set to manual for 18 min, then slow release the pressure… breakfast {or dinner} is ready!
Here’s the sausage casserole all cooked up! I will take a moment to mention that the veggie egg bake has more moisture because of all the veggies.. they add water to the dish. Personally I like my eggs cooked really, really well, so although the eggs were cooked, it was a bit soft for me because of the cooking in the instant pot. The sausage egg pan was cooked to perfection though… so if you don’t like your eggs soft, keep the veggies to a minimum… both were delicious, I just thought I would mention this, since my first thought was that the veggie dish eggs were runny… which they actually weren’t, but there was a lot of moisture in the dish.
