 With both boys in school now I have my afternoons free for blogging, but I also like to get dinner prepped during this time. Then I can spend time with the boys when they get home. This easy veggie pasta bake is a great dish that you can prep ahead of time, then just pop in the oven later in the afternoon for dinner.

I served it with tomato soup, but it would also be great with a salad or your favorite bread. {I’ll share a few of my favorite recipes at the end of this post.}

Easy Veggie Pasta Bake

Easy Veggie Pasta Bake

Ingredients

  • You will need:
  • 1 Zucchini, 2 Large Chicken Breasts, 1 Onion, 1 head broccoli, and 3 cups dry pasta, Panko style bread crumbs
  • Sauce:
  • 1/2 Cup Parmesan Cheese, 2 cups milk, 1/2 tsp salt, 1/2 c. cream cheese, 1 TBS Italian seasoning, 2 TBS Olive oil or butter.

Instructions

  1. Cook the pasta until just done.
  2. Cut and cook the chicken.. grill, bake or pan cook.
  3. Saute the veggies in the oil in a large sauce pan. When veggies are just soft add the milk, cheeses and seasoning {all the sauce ingredients}. Warm until melted.
  4. In a large bowl, mix the veggies and sauce with chicken and pasta.
  5. Pour into a greased bake pan 9x13. Top with Panko bread crumbs... either Italian or plain.
  6. Bake at 350 for 40 min. 25 min. covered and 20 min. uncovered. The Panko should be crispy and the noodles soaked in all the sauce.

    Hmmm, why is it called VEGGIE Pasta bake when it’s got chicken in it!? The title drew me in for a look but now I’m very disappointed!! Shame on you!! Change the name to CHICKEN Pasta bake then there’s no confusion

      Sorry… in my mind veggie and vegetarian are two different things… and you can always leave the chicken out. It’s tasty either way! And it’s full of veggies..
