I love a good cup of tea… in the summer it’s iced, and right now it’s a steaming cup to warm me up. I usually drink my tea in the afternoon, right when I’m also hungry for a snack. Today I’m sharing a perfectly perfect naturally sweetened whole wheat apple cake that pairs perfectly with a cup of Bigelow Tea. I love that I can naturally sweeten both my cake and tea with Truvia.
Bigelow English Tea is one of my favorite because it goes so well with a great coffee cake, or in this case, apple cake.
In addition to the apples, this cake is made with sour cream, which gives it an amazing consistency. It was SO good fresh out of the oven. I couldn’t help myself while I was taking photos. The streusel topping on top {and in the middle} is my favorite part. The apples are cooked just enough to be soft, but not mushy.

Naturally Sweetened - Whole Wheat- Apple Cake
Ingredients
- 1/2 c. butter
- Cake:
- 3/4 c. brown Truvia
- 1 tsp vanilla
- 3 eggs
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 c. sour cream
- Apples {2TBS butter, 1 tsp cinnamon, 1/2 tsp nutmeg}
- Streusel topping:
- 1 c. Brown Truvia
- 1/2 c. butter
- 1 tsp Cinnemon
Instructions
- Heat oven to 325
- Cream the butter and sugar and vanilla. Add the three eggs and beat well. Combine the flour, baking powder and baking soda in another bowl. Add the butter mix to the flour, then mix in the sour cream. In a pan, cook the apples in their spices and butter for 5 min.
- Make the streusel topping in a medium bowl.
- Grease a 9 x 13 baking dish. Pour half the batter in the bottom, sprinkle on 1/2 the streusel, then add the cooked apples on top. Top with the rest of the batter, then the remainder of the streusel. Bake for 50-60 min or until a toothpick comes out clean.
