I was giving this one pot Lebanese Chicken Pasta Recipe many years ago when we had some friends who lived in Egypt. We took an amazing trip to visit them and LOVED Egypt and the food. While there, my friend made a Lebanese Chicken dish which we loved and I’ve made so many times since then. Lately I’ve been adding pasta to the dish instead of putting it over rice and today’s recipe simplifies it even more… it’s all ONE POT! Did you know Barilla® now makes pasta that’s made for meals like this? I just love one pot meals, they are usually quick and easy, plus there’s only one pot to wash! So my chicken dish is now one pot Lebanese chicken pasta… and a good meal just got even tastier!
The pasta, chicken and veggies are cooked in a chicken stock, olive oil and spice base that creates a delicious and fresh flavor. The potatoes get pretty soft during the cooking and almost create a kind of sauce too. I love to throw the tomatoes in at the very end, so they stay fresh and not too soft. Using Barilla® Pronto™ pasta that’s made for One Pot cooking and doesn’t require draining making this meal super easy and fast for those nights when I just don’t have time for more.
Top the finished Lebanese chicken pasta with some herb Parmesan cheese and dig in!
I love how easy one pot meals are! Here’s the process in brief…
One Pot Lebanese Chicken Pasta
Ingredients
- 2 large boneless/skinless chicken breasts - cubed
- 1/4 cup olive oil + 3 TBS
- 1 tsp salt
- 2 TBS minced garlic
- 2 sliced peppers {one green, one yellow}
- 2 peeled and diced baking potatoes
- 1 large onion diced
- 2 small or 1 larger zucchini chopped
- 2 TBS Basil
- 3 cups uncooked Penne Barilla Pronto Pasta
- 2 cups water/chicken broth
- 1 cup cherry tomatoes, cut in half
- 4 TBS Herb Parmesan cheese
Instructions
- Peel, chop and prepare all vegetables and chicken first.
- In a large pot cook the 2 diced potatoes with 3 TBS olive oil over med. heat for 10 min. Add the chopped zucchini to potatoes and cook 3 more min. Now add the chicken, stir and cook 5 min. Add the onions and peppers and cook 2 min. At this point add the salt, basil and garlic, 1/4 cup olive oil, 2 cups water/chicken broth, and 3 cups uncooked pasta. Turn to high heat and cook for 10 min. until water is gone and pasta is cooked. Stir occasionally to keep pasta covered. Toss in the cherry tomatoes, top with the Parmesan cheese and serve warm!
Add crunchy bread crumbs for more flavor and added texture.
