** Post Updated 8/2021** Today I have a super yummy and easy salad idea for you! I made this when I was trying to use up some bacos. It’s even better with real bacon, but bacos can work, especially if you don’t eat bacon. This bacon, lettuce and tomato salad is a lighter version of the same sandwich.
BLT Salad Recipe-
This tasty salad is so easy and so yummy! I had this for lunch today as I was taking new photos and I loved it so much. It’s one I need to make more often for sure. These directions will show you how to make two servings.

My garden is over flowing with cherry tomatoes right now, so I used this kind of tomatoes. Small tomatoes are our favorite, so that’s all I’m growing this year. I cut them in half it was perfect for this salad. Gather a head of Romain lettuce, bacon, mayo and a bit of milk as well. {more details on what specific kind I used of each below}
Cut the lettuce into bite size chunks and place in a medium salad bowl to mix all the ingredients.
Repeat by slicing the tomatoes and adding on top of the lettuce. You can use cherry tomatoes like I did, or chop a full size tomato. You want about 1 cup of tomatoes total.
To make the easy dressing just mix mayo with just a bit of milk to thin. I used 1/4 cup of Avocado Mayo {my favorite!} and 1-2 TBS of almond milk to thin. You can use any mayo and milk for the same great salad. I just wanted to share the specifics of what I used.
Sprinkle the bacon on top of the layered salad, then drizzle the dressing on top.
Stir the salad to completely mix in the main salad bowl, then dish into two salad dishes to eat.
It was a crunchy and flavorful salad! I love BLT’s and this seems like a slightly lighter way to get the same flavors….without the bread calories!
BLT Salad Recipe
This recipe only serves two, so make sure to adjust as needed. This bacon, lettuce and tomato salad is easy to customize to make it just the way you want and like.
Ingredients
- 1 head Romain lettuce
- 1 cup chopped tomatoes
- 1/2 cup bacon bits or pre-cooked and chopped bacon strips
- 4 TBS Mayo of choice
- 1-2 TBS milk or almond milk
Instructions
- Chop head of lettuce into bite sized pieces
- Cut tomatoes in half
- Mix mayo and milk to thin
- Layer lettuce, tomato and bacon in a bowl. Drizzle dressing over top and mix fully.
- Dish up and eat. Will not keep for long as lettuce gets soggy once the dressing has been mixed.
