Inside: When we lived in Hong Kong a dear friend showed me how to make Authentic Fried Rice and I’ve been using her recipe ever since. Simple and delicious this Fried Rice Recipe is the best.
If you’ve been following my site for awhile you will know that we spent 14 years in Hong Kong. I made some dear friends there and one of them shared this fried rice recipe with me. Its a great one because you can use almost any veg or meat that you want and adapt it to fit your needs and tastes! When I was making this with my friend I learned some tips to make it more authentic.
Fried Rice with Chicken and Vegetables –
Ok, so this recipe shows what we like in our fried rice, but the great thing about this recipe is that you really can alter it to fit your taste! Want it vegetarian? Add tofu instead of chicken!
Don’t like all the veggies? Just add the egg and chicken.. make it how you like and you will love it. We serve with some dumplings {frozen from the store} and it’s a perfect meal.
Ok, so the one thing I learned for making this authentic fried rice recipe is that the rice must be dry! In your local Chinese restaurant I can bet that today’s chicken fried rice was yesterday’s steamed rice.
When I think about it I make the rice the day before. When I forget I just let it sit out on the counter for a few hours after cooking to dry out a bit. It seems to work.
Here are all the ingredients you need for this tasty Chinese Fried Rice Recipe.
- Precooked rice
- Precooked Chicken breast {if adding meat}
- Eggs
- Veggies
- Soy sauce and salt
See that huge pile of veggies? It just cooks down and doesn’t overwhelm the dish at all, but I love the fact that we are eating this many veggies for dinner.
Add the oil and soy sauce to a wok or large pan and cook until all vegetables are soft.
After the veggies are cooked soft, add the eggs right in the pan and stir to cook through. When the eggs are mixed in well and fully cooked you can add in the rice and chicken to reheat.
YUM! This fried rice dinner is one of our favorites. Not only does it remind us of our time in Hong Kong, but it’s full of flavor and is a quick dinner for me to get on the table. Plus you can prep much of it ahead of time of you want and then mix and heat for a fresh meal.
I just love all the bright colored veggies in this rice. My kids aren’t as excited about them, but they do put up with it pretty well. {they dump on a lot more soy sauce!}

Authentic Fried Rice with Chicken and Veggie
An easy to make authentic fried rice recipe. Customize for your family and filly with tasty ingredients for a filling meal.
Ingredients
- 1 cups dry rice cooked according to package. - day old or dried out.
- 2 chicken breasts {cubed and cooked in a little soy sauce}
- Soy Sauce 2 TBS
- Olive Oil 2 TBS
- chicken broth 1/4 cup
- salt
- 4 eggs
- 3/4 cups vegetables finely chopped
- {carrots, broccoli, cauliflower, spinach or other green, zucchini, mushroom, etc}
Instructions
1. Start with OLD rice. I never knew this until my cooking lesson. I guess the best is day old rice. You want it a bit dried out. Although if I forget I just make it earlier in the day and let it sit out for a couple of hours to dry, nice... I use a mix of brown, white and red rice. But you can use just one kind as well. Make it according to the directions.
2. Choose your ingredients. I used carrots, broccoli, cauliflower a Chinese leafy green, zucchini, egg, and chicken. You can also add tofu, bean curd (the firm kind), and ANY of your favorite vegetables!
3. Set the cooked rice and chicken aside.
4. Put soy sauce and oil in a large pan or wok and cook on high until tender {add broth only if they begin to stick to pan}. Add eggs directly to the veggies and turn heat down to medium until eggs are cooked.
5. Turn heat down to low and add chicken and rice. Stir until hot and mixed through.
6. Offer more soy sauce on the side if you want to flavor to taste. {my kids add more and the adults dont}
