Finding meals that my whole family likes can be tricky… I have one son who does not do cheese, and the other is picky about meat… Most of my meals have one or the other of those ingredients in them! I was thrilled when I tried this recipe and BOTH boys ate it! The cheese is crispy enough for my texture kid and the meat has a great crunchy coating for the picky meat eater… PLUS, the tasty and easy ranch dip made this meal a hit with my whole family. Baked Chicken Fingers Recipe –
It is always my goal to put good food on the table for my family! I care about what we eat and when I have control {at home!} we eat well. These baked cheesy chicken fingers aren’t fried and are covered in a good for your coating that tastes amazing. Plus, the dipping sauce is just made from yogurt!!
Let’s jump right into the recipe. I feel good about feeding my family all of these ingredients and the end result is SO tasty!

Baked Cheesy Chicken Fingers - Easy Mealtime Solutions
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup panko bread crumbs
- 1/2 cup Parmesan cheese
- 1/2 cup shredded Horizon Organic Cheese
- 1 tsp garlic salt
- 1 tsp paprika
- 1 egg
- DIPPING SAUCE
- 1 cup love fat plain Horizon Organic yogurt
- 2 tsp ranch dip powder
Instructions
- Slice the chicken breast into thin strips. Prepare a baking sheet by greasing it. Heat oven to 400F. Mix the bread crumbs, cheeses and spices in a zip lock plastic bag. Shake to mix. Crack the egg into a shallow bowl and mix it up. Dip 3-4 chicken pieces into the egg, then put in the breading and shake the bag. Put the coated chicken on the baking sheet and continue until all the chicken is coated. I use spray oil to lightly spray the chicken before baking. This helps to crisp the coating. Bake for 15-20 min. until the the coating is light brown and the chicken is cooked when cut into. Mix the ranch powder into the yogurt and serve.

You can really dip these cheesy chicken fingers into any sauce you like, but this ranch dip is amazing and it really made the meal.
