They say breakfast is the most important meal of the day. Once you have kids, you know this is true, my boys wake up starving! My oldest even went through a stage where he would get up at 5:30 am need to eat immediately. I would make him a bowl of cereal then lay on the couch while he ate…{ha!} He now wakes up at a more reasonable time, but we all start the day with a nutritious breakfast that keeps us fueled until lunch. A friend of mine shared her baked oatmeal recipe with me as an easy make ahead meal and now I’ve named it the Best Baked Oatmeal recipe… it’s just that good.
This best baked oatmeal recipe is the perfect because you can make it the night before, make it fresh, eat it dry, or with milk. So versatile and tasty each and every way. This recipe also can be made with just oats, or you can add lots other ingredients for extra goodness.
I love Quaker Oats, I use steel cut oats for regular stove oatmeal, but for this best baked oatmeal I used the old fashioned rolled oats. They cook fast, but don’t get soggy, just right for this recipe.
Best Baked Oatmeal Recipe
Ingredients
- Part 1
- 3 Cups Quaker Old Fashioned Rolled Oats
- 2 tsp. Baking Powder
- 2 tsp Salt
- 1/2 Cup Brown Sugar
- 2 + Tbs. Cinnamon
- Part 2
- 3 Eggs
- 1 Cup Milk
- 1/4 Cup Melted Butter
- 1 tsp. Vanilla Extract
- Options...
- Nuts
- Seeds
- Raisins/Cranberries/Dried Fruit
- Other Spices
- mashed banana
- Almond milk instead of milk
Instructions
- Mix part 1 together in a medium mixing bowl. Mix part 2 together in another medium mixing bowl. Add part 1 to part 2 and mix well. Add in any of the other optional ingredients you want. Pour it all into a greased baking pan of your choice. I used a 9 x 13 pan. Place in the fridge overnight. OR preheat oven to 350F (190C).
- Cook for 20-30 min. until the top is firm and the bottom is browned. Dish up and pour milk over while warm, or eat dry like granola.
In addition to the rolled oats I added assorted nuts and seeds and craisins.
The Quaker Rolled Oats and all the other great add-ins can be found at Target stores. Most Target stores have a store display with the steel cut oats and recipe cards with delicious ways to use the oats.
The oats baked with milk and eggs are perfectly flavored with spices, nuts and berries for a great snack, right out of the pan.
I was trying to keep the kids out of it long enough to take photos!
I put the leftovers out for snack time later in the day and we ate it right up. I love the idea of being able to take this baked oatmeal with me for a on-the-go meal as well.
