I love using spring roll wrappers to make unique recipes. I’ve made a few over the years and now I’m adding to the list with these totally yummy caramel apple pecan rolls. OOO they are good! Many of my favorite fall flavors all together. With crunch, spices and the tangy bites of apple, you won’t go wrong serving these caramel apple pecan rolls at a holiday function this season.
Caramel Apple Pecan Roll ups –
With ice cream these rolls are perfection!
If you haven’t used spring roll wrappers before you need a bit of water to close the end. You can bake them, but this time I choose to shallow fry for the extra crunch.. When I bake I put on a greased sheet and then spray the top of rolls with more cooking spray before baking at 400 until golden brown…
These are like caramel apple pecan bars, only better!! they are a tasty roll up!!
Each bite has apple, pecans and some bits of caramel… YUM!!!
I think these would be amazing with whipped cream as well, but ice cream is just perfection!
Caramel Apple Pecan Rolls
Ingredients
- 1/2 C. pecans
- 2 green apples
- 1/4 C. caramel bits
- 10 sheets of spring roll wrappers
- 1/2 tsp cinnamon
- 1/4 tsp of cloves, nutmeg and ginger
- 2 TBS butter
- 2 TBS brown sugar
Instructions
- finely chop the apples. Melt the butter in a sauce pan and then add the apples, pecans and spices. Cook 2 min on high heat, then add the brown sugar. Cook 2 more minutes. Lower heat and continue to cook until the apples are just soft {about 10 min} Place a couple spoonfuls of this mix on a spring roll wrapper. Roll up, secure end with water and place to the side. Complete remaining rolls. Bake or Fry. For frying put 1/2" of oil in a pan and heat until spitting. Shallow fry each side until browned.. Serve with ice cream or whipped cream while warm. For baking put on a greased sheet and then spray the top of rolls with more cooking spray before baking at 400 under golden brown...
