Since this corn salsa recipe is so easy to make you can easily add this to any Mexican meal you already love – what a great combo, easy and fast too. The taco seasoning gives it a little kick… it keeps well for a few days too. Eat it on your favorite Mexican meal or with chips.

Corn Salsa Recipe with Herdez Cocina Mexican Bowls
Ingredients
- 1 can of corn
- 1 cup cherry tomatoes {cut in half}
- 1/2 red onion {finely diced}
- 1/2 can black beans
- 1 TBS Olive Oils
- 1 TBS Taco Seasoning
Instructions
- Mix all in a medium size bowl and let sit for 2 hours to let flavors set. You can also make it the night before and have ready for the next day.

You’re right! Great minds do think alike, lol. I love this recipe! It’s a lot different than my usual black bean and corn salsa. I love trying things I love in new ways so I think I’m going to give this one a go. Have you ever added some diced avocado to it? I think the color, texture and flavor would be fantastic in this recipe.
