I’ve seen all the recipes using cauliflower as a substitute for all.the.things…. rice, pizza crust, mashed potatoes… and decided I would give it a try… well, at least a half try {ha!} The reason I say half is because this creamy low fat ranch mash is half cauliflower and half potato… so I give you a creamy low fat ranch cauliflower potato mash that NO ONE will guess isn’t actually ALL potato… that’s right… I fed it to my family and no one had any idea… so I was able to make this dish just a little bit better for my family health wise and I didn’t have to sacrifice any flavor… score!
My family gobbled down this yummy dinner of roasted chicken, creamy low fat ranch cauliflower potato mash and cherry tomatoes.. yes, we all like to just each tomatoes… The cherry ones are just so good!
Alright, this isn’t too hard to make and ends up looking a lot like a regular mash potato recipe, with just a couple of changes.
When I peeled and chopped my potatoes for boiling I also chunked the head of cauliflower into smallish size pieces.
Then I boiled the potatoes AND the cauliflower together for 20 min… I did them in the same pot for the same amount of time.
After that I just added in the flavorings and used my mixer to make into totally delicious cauliflower and potato mash! Here’s the full recipe:
Creamy Low Fat Ranch Cauliflower Potato Mash
Ingredients
- 3 Large Potatoes - peeled and chunked
- 1/2 a head of Cauliflower - chunked
- 2 TBS ranch powder
- 1/4 cup plain yogurt
- 1/4 cup low fat milk
- salt and pepper to taste
Instructions
- Clean and peel the potatoes, chop the potatoes and the cauliflower. Put in boiling water for 20 min. Place in a large mixing bowl. Add the milk, yogurt, and ranch. Blend with a mixer until smooth and creamy. You can add more milk as desired for thickness/thinness. Serve hot and ejoy!
Just in time for the holidays… I dare you to serve this at a holiday meal and see if any notices the cauliflower {ha!}
