This crunchy broccoli dish is my new favorite way to eat my veggies! I’ve also tried this same panko topping with cauliflower and it was just as good. I’ve been making this crunchy broccoli with panko for several weeks now and I just can’t stop. Dipped in your favorite ranch or Asian dip, this baked broccoli is a winner!
Crunchy Broccoli with Panko
Just looking at these photos again makes me want to eat some broccoli… and I just had this for lunch today {haha!} I was running a bit behind on getting this post written, so I made this baked broccoli for lunch and then Rose and I polished off the whole plate! I spent the ENTIRE rest of the day staining the railings in our home to match the flooring… spindles are SO tedious, but having a yummy lunch kept me going.
Here’s what you will need to make this tasty baked crunchy broccoli dish {scroll down for printable recipe}
2 handfuls bit sized broccoli – 1/2 cup panko crumbs – 2 TBS parmesan cheese – 1 TBS Italian seasoning – 2 eggs {beaten}
Mix the panko, cheese and seasoning to make an Italian panko mix. Beat the eggs to mix.
Dip broccoli in the egg, let drip, then place in the panko mix. Cover on all sides and them place on a greased cookie sheet. I love my textured baking sheet as everything gets so crispy.
Bake at 400 for 20-25 min until the crumbs are golden brown and the broccoli is just soft.
