I love having something to munch on for that mid-afternoon snack time. When the boys are at school and the toddler is sleeping, I get hungry! Something new that I just discovered is Silk Nutchello. I’ve been a huge fan of Silk products and these new Nutchello drinks are amazing! I love the Dark Chocolate & Walnut flavor, so I used that as inspiration for these no bake dark chocolate & walnut energy bites. YUM!
The flavors of these energy bites and the Nutchello compliment each other perfectly. Both are chocolaty and nutty, not too sweet and just what I need during the afternoon lull {or really any time of day!}

The dark chocolate & walnut energy bites take about 5 min to make, then I chilled for about an hour before eating. You can eat right away, I just wanted it cold. Silk Nutchello is also best served over ice. To make these you will need oats, coconut, almond/peanut butter, dark cocoa powder, ground flax seeds and chopped walnuts. You will also need milk {or Silk} for a bit of moisture. The full recipe can be printed below.
All you have to do is mix all the ingredients together, shapes 1″ balls and chill. So easy! This recipe makes about 1 dozen, so if you are serving a group of people you will want to at least double it.
Of course you can omit any ingredient you don’t like and change it for something else you do like. I know coconut is something not everyone likes, and this could be easily taken out.
DARK CHOCOLATE & WALNUT ENERGY BITES- NO BAKE
Ingredients
- 1/2 cup quick oats
- 1/4 cup milk {Silk}
- 1/4 cup coconut
- 1 TBS ground flax seeds
- 1/4 cup peanut/almond butter
- 1 TBS dark cocoa powder
- 1/3 cup chopped walnuts
- this recipe is not very sweet - like dark chocolate. If you want it more sweet, add a bit of sugar or honey.
- Instructions

- Soak the oaks in milk {Silk} for a couple of minutes, then mix everything else together.
- Form 1" balls in your hand and roll. The mix is dry enough it shouldn't be too sticky.
- Chill for 30 min before serving.
- Store in an airtight container for up to a week.
You can find everything you need to make these dark chocolate & walnut energy bites at Walmart, as well as Silk Nutchello. I bought the Dark Chocolate and Walnut, but you can also find Caramel Almond & Cashew and Toasted Coconut & Cashew in stores. Can we call these truffles instead? For some reason I get turned off my the thought of energy bites, but if we were to call these truffles, it plays with my head just enough. They do sound delicious though.
