I’ve been buying boxes of freezer breakfast sandwiches for my family lately.. I don’t do hot breakfast on school mornings… just too much drama around our house in the mornings for me to bother, but I can heat up a breakfast sandwich.. I decided to try and make some make ahead breakfast sandwiches that would be easy and healthy for our whole family… Here is my version!
Healthy Freezer Breakfast Sandwiches
Personally I’m excited that these healthy breakfast sandwiches come in at about 200 calories and are super tasty and fit in with my healthy life style. I made 8 sandwiches in about 15 minutes and then left them in the freezer for two weeks before I tried them. Usually we eat our frozen breakfast sandwiches long before 2 weeks, but I wanted to test the flavor after that long… super yummy! I just put in the microwave on defrost for 2/3 minutes and my sandwich was hot and tasty!
I make my eggs in a large pan. I made one egg per sandwich, and cooked four eggs at at time in this pan.. So I made two batches of eggs before assembling my sandwiches.
I also mixed shredded mozzarella into the eggs so it wouldn’t fall off my sandwich. You could also add a slice of light cheese.
Sliced lunchmeat {nitrate free}, spinach and cheese make great toppings for the egg.
I wrapped the sandwiches in freezer paper, but small freezer bags would also work.

A bit of defrosting and I had a delicious and healthy breakfast sandwich. I LOVE that I can make head and pull out of the freezer just minutes before I want to eat.
