I really love festive holiday food. Even the most simple dish can be made fun with a little color and holiday spirit. This easy breakfast I’m calling Grinchy Granola – an easy Christmas Breakfast. With green yogurt, crunchy granola and a heart “just the right size” you will love this festive Christmas breakfast.
Christmas Breakfast Ideas –
This better for you breakfast is super fun to make, looks cute and tastes amazing. With a few added ingredients the yogurt becomes greenish, then add Granola.
Here’s what you will need to make this super awesome Grinchy Granola…. Granola, spinach {fresh or frozen}, Chia Seeds, and Yogurt {plain or vanilla}
If you use plain yogurt, add some honey {or sugar} to sweeten, then chia seeds and the spinach. If you are using fresh spinach, steam, chop and squeeze out the liquid before adding to the yogurt. If you are using frozen spinach just thaw and remove the water.
Mix all together to make it green… Now, I should say… I know my kids will eat this, but I imagine there are many kids who won’t be so excited by spinach in their yogurt…. so.. you could just add a drop or two of green food coloring to achieve the color.
The recipe below makes two servings.
Top with granola and add a licorice string heart. I used two strings from a mini piece and it was just the right length to make two sides of the heart. If you have long strings you will need to trim to add to the top of your bowl.
So… although the Grinch’s heart may have been two sizes too small, these bowls of fun grinchy granola have hearts just the right size.
