My kids LOVE frozen snacks in the summer. Many of these are sweet treats… which I like to give to them sparingly… so I made this healthier ice cream cookie sandwich {AKA: whole wheat cookie with frozen yogurt}. I created a yummy cookie with whole wheat flour and low sugar and the filling is frozen yogurt… all delicious! Scroll to the bottom of this post to check out some other yummy summer food recipes.
Ice Cream Cookie Sandwich {healthier!} + Yummy Summer Food
These may be a healthier ice cream sandwich, but my kids don’t know that and they don’t care. YUM! Frozen treats are the best in the summer!! Think this may be something your kids would like? I’ll show you how I made it…
Here’s my whole wheat pumpkin walnut chocolate chip cookies with low sugar. I made flattened cookies about 2″ across from the recipe {you can find the recipe below}
For the frozen yogurt I used plain greek yogurt with honey and vanilla, but you can use any yogurt you like. I put some in a bowl and put it in the freezer to firm up for about 20 min. This will help it keep its form when you put in on the cookie.
Place a piece of clear wrap on your table. Scoop a few spoonfuls of the semi-frozen yogurt on the flat side on cookie.
Add the other cookie on top.
Wrap up and freeze for another hour.

Ice Cream Cookie Sandwich {healthier!} + Yummy Summer Food
Ingredients
- Pumpkin Walnut Chocolate Chip Cookies
- Ingredients:
- 3/4 Cup Butter {softened}
- 1/2 Cup Pureed Pumpkin
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1 tsp vanilla
- 2 eggs
- 1 tsp baking soda
- 1 tsp salt
- 1 1/4 cup whole wheat flour
- 1 cup white flour
- 3/4 cup chopped walnuts
- 3/4 cup mini chocolate chips
Instructions
- preheat oven to 375 F. Combine the butter, pumpkin, sugars and vanilla. Cream together with a mixer until smooth. Add 1 egg, beat, then the other egg. Add the baking soda and salt while mixing slowly, then add the flour in small increments. Mix in the chocolate and nuts. Spoon and roll small balls, {flatten for cookie sandwiches} place on a greased cookie sheet and bake for 9-11 min.
