I just got an Instant Pot, and let’s just say I’m a bit excited about it! {ha!} I’ve been trying recipes I used to make in the traditional fashion, making them INSTANT versions now. This Instant Pot Chicken Rice Broccoli recipe is a one I’ve been making for years {without the instant pot} and now this easy chicken dish just got easier!
Instant Pot Chicken Rice Broccoli Recipe
Ok- So I’m not kidding… this recipe could not be easier!! It takes 30 min from start to finish and most of that time the pot was doing all the work so I could paint my toes, eat bon-bons and watch tv {or whatever you do when you have too much time on your hands – haha}
It used to take time to cook the rice and chicken seperatly then, mix together with the cheese, broccoli and soup to blend the flavors.. But it was so easy to do it all at once in the pot!
Here’s the super easy Instant Pot rice chicken broccoli recipe – this will serve 6.
Instant Pot Chicken Rice Broccoli Recipe
Ingredients
- 1.5 cups chicken broth {or water}
- 2 cups instant brown rice
- 3 cups thawed frozen broccoli chopped {or fresh}
- 1 cup cheddar cheese {chunked or shredded}
- 2 cubed chicken breasts
- 12 Oz. cream of mushroom soup {I like to use an organic kind}
Instructions
- Place the cut chicken, rice and broth in the Instant Pot - Mix and put the lid on. Set to Manual and 10 min. Mine takes about 10 min to heat and then the timer will countdown the 10 min. During this time you can prep the cheese and broccoli. Release the pressure by turning the top lever to release. It takes about 2 min to open the lid. The Instant Pot will now be on warming. Add the cheese, soup and broccoli- Mix. I put the lid back on for 5 more min to let the cheese melt and flavors mix. Serve and Enjoy!
You can add more broccoli if you like, or less as well. This is a recipe that my husband used to to make for himself before we were even married and now I make it for him occasionally. The kids think it’s pretty great as well – you can’t really mess it up! So far my Instant Pot cooking has been successful, can’t wait to keep trying our favorites in “instant versions”. With an Instant Pot you can make this meal {almost} this fast…
