I’ve been making versions of this Lebanese Chicken Recipe for years. Sometimes I make it with pasta, or just extra potatoes. I made this recipe with chicken and veggies over rice – it was so tasty.
This recipe was give to me by a friend when we visited her in Eygpt. She learned it from a Lebanese neighbor… so I think it’s authentic. The spices and flavors mix together so well for a delicious, yet simple meal.
Gather all your gorgeous fresh veggies and rice. You can use white or brown, I usually try to use a mix of both. I thinly slice the peppers, chop the onions, slice the zucchini, then cut those slices in half. The tomatoes I just chop up and the potatoes you want to cut into thin-small bite size pieces. {you also want them small enough that they will cook quickly}
Place the chopped veggies in the pan, cover with the sauce, then place the chicken on top. Cover with a lid or foil to bake – it keeps all the moisture inside the dish. {see the recipe card below for all the details!}
Lebanese Chicken Recipe with Rice and Veggies
Ingredients
- 2 large boneless/skinless chicken breasts - cubed
- 1/4 cup olive oil
- 1 tsp salt
- 2 TBS minced garlic
- 2 sliced peppers {one green, one yellow}
- 2 peeled and diced baking potatoes
- 1 large onion diced
- 2 small or 1 larger zucchini chopped
- 2 TBS Basil
- 2 cups water/chicken broth
- 1 cup cherry tomatoes, cut in half
- 2 cups uncooked rice - cook
Instructions
- Pre-heat oven to 400f/200c Chop the veggies into thin slices. Cut the chicken breast into strips. Mix the water, oil, basil, garlic and salt together. Whisk in a small bowl. In at 8 x 10 baking dish spread veggies on bottom. Pour the water/oil mix over the veggies and mix. Place chicken on top and close with foil. Bake for 45 min or until potatoes are soft. Cook the rice while this is in the oven. Serve over rice if desired.
