I love Quinoa, I’ve started using it instead of rice in almost every dish. Last week when we had friends over, I thought I would make up a side dish for our burritos. This Mexican quinoa turned out so good. It is a perfect side dish or even burrito stuffing.
It was great as a stand alone dish too. I added cheese and a dollop of sour cream, then scooped it up with chips. So tasty! Filled with sauteed veggies, beans and corn, with healthy quinoa as a base this Mexican quinoa is totally amazing.

Mexican Quinoa
Ingredients
- 2 cups uncooked quinoa
- 1 med red onion
- 1 green pepper
- 2 TBS taco seasoning
- 1 can corn
- 1 can black beans
- 1 can chopped tomatoes
- Optional:
- Shredded Cheddar Cheese
- Sour Cream
Instructions
- Cook the quinoa as directed on the package, but use the can of chop tomatoes for the water. If more water is needed, use part water, part chop tomatoes.
- Finely chop the onion and pepper and sautee in a bit of olive oil for about 5 min.
- When quinoa is fully cooked, add in the taco seasoning and all other ingredients while still warm. This allows the flavors to fully mix. Top with cheese and sour cream if desired. Serve with chips or tortillas. Good eaten warm or chilled.
It makes a big bowl, so you can share! Perfect for family Mexican night or having friends over for dinner.
