My mom has made the best refrigerator pickled beets for years… I don’t really like beets, but I LOVE these pickled beets. So when I saw these beautiful orange and purple beets in the store last week and my mom happened to be visiting I knew I had to make some refrigerator pickled beets.
Refrigerator Pickled Beets-
This beet recipe requires no canning and only a few minutes {not counting cooking time}. You can keep your pickled beets in the fridge for weeks after making them {although mine may not last the weekend! Too yummy!!}
I just loved the colors that were revealed when I peeled the beets. I’ve never cooked the orange ones before and they were just a bit harder to peel, but taste just the same.
You can slice or cube the beets, but I like thin slices so they absorb more of the pickling mix.
Refrigerator Pickled Beets
Ingredients
- 8 med beets {can be different colors}
- 1/2 TBS salt
- 2 TBS Sugar
- Apple Cider Vinegar
- Water
Instructions
- Cut beet stems down to about 1" and boil in water for about 35 min. Do not cut off ends or break the skin or all the color will come out of the beet. Test with a fork, it should go in, but not be too soft. Run under cold water until cool enough to touch. Cut off stem and root end, then peel with your fingers to remove the skin.
- Slice or chunk the beets.
- Put in a medium bowl. Not too big or you will waste vinegar. Put in the beets, salt and sugar. The pour in vinegar until the beets are 3/4 covered. Add water until just covered {not too much liquid} stir, cover and chill for 3+ hours before serving. This allows the flavors to pickle the beets. You can keep for several weeks in the fridge if you make a large batch.
Look how pretty!! I just love the colors… Now I will say.. when they sit in the fridge to pickle the purple overwhelms the orange and all the beets end up mostly pinkish… but they are certainly pretty with the bright and bold veggie colors.

I love pickled beets! Throw a chopped onion in there, It tastes so much better! Also if you like hard boiled eggs, throw a few in there too and you also will have pickled eggs, very yummy (doesn’t change the taste of the beets either so you can eat them separately!)
