You know that I love the make healthy and delicious meals for my family. We don’t always eat as healthy as I would like {and we like to eat out…sooooo} but when I make meals at home I consciously make good choices. I’ve been working on substituting quinoa for rice in many of our favorite dishes… Years ago I made a stuffed pepper with feta recipe, but today I’ve added a few ingredients and now I’m sharing this recipe for sausage and feta stuffed peppers.

I LOVE the colors in this meal! You can use any color pepper, but I’m partial to yellow and red.
