Most of you know I live in an apartment… most of my friends do as well. I am blessed with a full size oven in our place, but I have friends who only have smaller countertop ovens. We are always discussing meals that can just be made on the stove top, so ideas for skillet pan dinners are always appreciated. Today I’m sharing a quick and easy dinner idea that can be made with a single skillet. {although two would make it easier!, ha!} With skillet pan dinners in mind, I was excited to try this Thai Green Curry skillet sauce because my family loves Thai food. All of us! We have a favorite Thai restaurant where we all can find something we like, so it’s a family favorite. For this meal I went with a little Asian fusion and made Thai green curry spring rolls! The great thing is that you can personalize this meal by choosing the ingredients your family desires. And anything works…

Want to make your own Thai curry rolls? Here’s the recipe:
Skillet Pan Dinners: Thai Curry
Ingredients
- 1 package Campbell's Thai Green Curry Skillet Sauce
- 2 cup uncooked rice- I use a mix of brown, white and red
- Vegetables of your choice- 1 cup chopped
- diced chicken
- springroll wrappers
Instructions
- Two skillets are handy for this...
- cook the rice in the first skillet {or if you use microwave rice cook there}
- While rice is cooking place the package of skillet sauce and veg and chicken in the second skillet and cook over med. heat until ingredients are cooked through.
- Once rice is cooked use that first skillet to brown the springrolls. Place 2 tbs oil in the pan and heat. Use a slotted spoon to take veg and chicken from the sauce and place a spoonful on each springroll wrapper. Make sure to drain of most of the sauce or the wrapper will be too soggy. Roll and place in the hot oil. This is not a fry, rather just enough oil to brown the side. Turn until all sides are brown. Place some rice on each plate and add a roll or two. Use the extra curry sauce from the pan to pour on top of rolls and rice for dressing. Serve hot and enjoy!

oh I roll up everything is springroll wrappers ;o) its a great way to make mozzarella sticks too!! my kids love things rolled up and pan fried ;o)
