I live in a house a boys… between my sports-loving husband and our two sons I feel like I live in a gym! And I know it’s only going to get more as the boys get older….. This time of year my basketball fans are in heaven with the college basketball tournament, but I’ll admit… I’m not much of a fan, so I have to find ways to have fun with the sports nuts around me. How do I do this? I make sports about the game time food! Great food to eat while we watch basketball. I’m sharing with you today this amazing Skittles Caramel Mix, a perfect slam dunk mix to eat while you watch the tournament! Try the sweeter side of basketball with this Skittles caramel mix.
Oh and I also made a cute basketball court with Skittles AND adorable basket balls from tiny oranges… so yes! I can have lots of fun with the basketball tournament and not watch a game! {ha!}
Recipe adapted from Fine Cooking
Skittles Caramel Mix Pick the Rainbow, Taste the Rainbow
Ingredients
- Caramel Sauce
- 1-1/2 tsp. baking soda
- 3 cups granulated sugar
- 1-1/2 Tbs. kosher salt
- 1 cup water
- 1-1/2 oz. 3 Tbs. cold unsalted butter, cut into small pieces
- Mix
- 1 cup Skittles
- 2 cups popped popcorn
- 1 cup fish snacks
- 1 cup pretzels
- 1/2 cup dried fruit mix
- 1/2 cup mini marshmallows
- 1 cup O's cereal
Instructions
- Mix all the dry ingredients in a large mixing bowl, measure out the baking soda and set aside. You will need it ready to go quickly. Line a baking pan with foil and set aside.
- In a large sauce pan mix the water, sugar, salt and butter. On high heat, and stirring constantly cook the sugar mixture until it's bubbly and slightly brown on top. This may take 10-20 min. Remove the caramel from the stove and whisk in the baking soda. It will bubble even more, so be careful it doesn't spill over. Pour is straight away over the bowl of dry mix and stir through quickly. Pour it all out onto the baking sheet and press it to a thin layer. Let cool, then break apart to bite size pieces. Store in an air tight container.
- Tip- use a wooden spoon or other heat resistant spoon because stirring the caramel will melt a normal plastic spoon {ummm I may know this from experience}
I used my favorite salty and sweet mix ingredients, you can add or take out what you like or don’t. Here was the selection I used.
The bubbly caramel mix, pour quickly over the mix after you add the baking soda.
Spread as thinly as possible on a lined baking sheet. The faster you get it out of the bowl, the thinner you can get the mix. After it cools, break apart to bite size pieces…
yum! This is a cluster of goodness! The salty sweet combination is my favorite.
Put a bowl out when the game is on and watch the basketball fans be very happy….

Thank you all for your comments. The tablet is an amazing thing. I don’t know how I drew anything with the mouse before! Just a big ol’ clunky thing that is so cumbersome now.Bertha: I’d not thought of that… maybe I should put the head on a background of LotR movie still. Knottydon: No, Illustrator CS is the latest version of Illustrator. They’re going to be coming out with a new version called . I’m going to wait to update my home version till that comes out and hope that there’s a great student discount!
