Have you tried a Southwest Eggroll Recipe? This one has been a family favorite for years now… So, I’ve made lots of eggrolls, but I years ago we realized eggrolls are not just for Chinese food!! You can make the most amazing mexican eggrolls, breakfast eggrolls and pretty much any other yummy fills you can dream up. We are seriously in love with this southwest eggroll recipe and I crave them… {like all the time!} You can also bake your eggrolls, but I do prefer them fried if I have the choice.

I love this easy meal, it’s also a great way to use up leftover chicken or ingredients leftover from another mexican style meal. You can easily customize this recipe for southwest eggrolls {another reason we love it} and I make some for each family member just the way they like it, with very little effort on my part. We’ve also called them Mexican eggrolls for years, so whichever name you think suits….
We served with southwest ranch, plain yogurt {what we use for sour cream} or just salsa.. it’s all good! Personally, I love to just mix plain yogurt {sour cream} with salsa for a tasty dipping sauce for my Mexican Eggroll.

Alright! Let’s talk about what we put in them and then you can customize this Southwest Eggroll Recipe to suit your needs and tastes. Here’s my delicious spread of ingredients… Amazing, right?
Prepare all the ingredients as directed below..
I make a veggie version and a chicken version. If your family likes it all you could go really crazy and have beans AND chicken in one roll. I also have a child who doesn’t like cheese so I add that at the end… You can also mix that cheese into your filling.
Fry or bake to cook. I try to fry in good oil to make myself feel a bit better about the frying.. They are good baked, but they are SO good fried {haha}

Southwest Eggroll Recipe
Ingredients
- 1 cup canned sweet corn
- 1 cup black beans
- 1 cup cooked and chopped chicken
- 1 cup shredded cheddar or Mozzarella cheese {or a mix of both}
- 1/2 cup chopped green onions
- 1/2 tsp garlic salt
- 1 avocado diced
- Sour Cream and/or Salsa for dipping
- 12 spring roll wrappers thawed from frozen or fresh
- You can make vegetarian by omitting the chicken.
Instructions
- Mix corn, beans, chicken, cheese, salt and avocado together in a large bowl. Separate the spring roll wrappers and place in a stack. Put a large spoonful of the mix on top of the wrapper and roll as you would a spring roll. Secure with a bit of water if needed. Continue until all 12 are full. At this point you can place on a greased baking sheet {spray with a bit of oil} and bake in the oven for 15-17 min @ 200C/390F {until crisp} or shallow fry in a pan with 1/2 inch of cooking oil. If fried, drain on a paper towel after cooking. Serve with lettuce for wrapping and sour cream and salsa for dipping.
