I love cooking quick, easy, 20-30 minutes recipes.
This super easy quesadilla recipe would be perfect party pleaser or just a simple weeknight dinner on the table.
If you like Greek style food, it won’t disappoint you!
Feta and Spinach goes so well together. We love them and I always have these ingredients in my fridge.

Use simple flour tortillas and cook them in a teaspoon of butter in a pan–this makes the tortillas so crunchy, crispy and much more enjoyable.
The melted cheese on the top of the filling makes the quesadillas stick together well ( I prefer Monterrey jack or mozzarella cheese).

SPINACH & FETA QUESADILLAS
INGREDIENTS:
1 tsp. butter
1 tsp. olive oil
½ small onion, chopped
1 cup fresh baby spinach
2 tbsp. feta, crumbled
1/2 cup shredded cheese
4 -10 inch flour tortillas
Salt and pepper to taste
DIRECTIONS:
1,Warm olive oil in pan and cook onions for 3 minutes
2,While onion is cooking, steam spinach.(about 3-5 minutes)
3, In a bowl, mix together cooked onions, steamed (and squeezed to drain) spinach, feta, salt and pepper.
4, Melt butter and add tortilla to a pan. Spoon mixture on the top of tortilla than add shredded cheese.
5, Add another tortilla on the top. Cook until quesadilla is golden brown on both sides. (about 2-4 minutes)
Tip: To easily flip quesadillas, place a plate onto the top of quesadilla in the pan, then turn quesadilla onto plate, than slide it back to pan.
