I love festive holiday desserts… Going crazy with food coloring? Sign me up! Just a few times a year do I throw health and diet out and eat a yummy dessert. This tasty St. Patrick’s Day Dessert is full of color and flavor. The two more important things about dessert, right? Who’s with me!? So, a funny story… My five year old was watching me take these photos… His comment, “Mom, why is the food so messy? No one wants messy food!”. I had to laugh. I guess the mint sprinkled in front and the glaze on top is just too much for him. I thought they turned out pretty. I made these two ways. 1. as a parfait {ish} dessert. Layer the crumbled brownie, then pudding and ganache on top of that. Sprinkle a bit of chopped Andes mints on top and you have a hit! You can also just make it a pan. This is the way to mass produce it for sure. {side note} My first batch of brownies.. I forgot the sugar and doubled the flour. Let’s just say it was like a really bad chocolate biscuit!} We each took a small bite and then the whole pan when in the trash. SO, I would suggest printing this recipe out, instead of copying it with a pen. {opps! Easy to make a mistake…} I wondered why flour was on the recipe twice, I didn’t wonder why there was no sugar though {ha!}
