With summer coming all I want to eat is salads… {ok, not ONLY salads, but lots and lots of salads}. Last night we had Super Salads for dinner, and tonight I’m making this tangy coleslaw recipe to go with our dinner. This coleslaw is just the right mix of sweet and tangy. I love that it’s full of carrots and some onions too, such a great flavor combination.
Tangy Cole Slaw recipe
This recipe makes 4 – 1 cup servings, or can serve more if you want smaller servings.
I need a new spiralizer for sure!! I love using it for the carrots in this recipe, but I don’t like the one I have. Aren’t the colors so pretty in this coleslaw?
Tangy Coleslaw Recipe with Purple Cabbage
Ingredients
- 3 cups chopped cabbage
- 1 cup carrots
- 2 TBS diced onion
- 2/3 cup light mayo
- 3 TBS Vegetable Oil
- 1/3 cup white sugar
- 1 TBS vinegar
- 1/4 tsp salt
Instructions
- Chop cabbage to small pieces, spiralize or slice thinly slice carrots, and dice onions
- Put into a mixing bowl. Mix all sauce ingredients together first OR just pour over the veggies. Mix well, chill for at least 1 hr. and serve.

This looks so yum! I usually don’t use mayo in my coleslaw, though, since I prefer more vinegary based slaws. As you know, people have VERY different preferences when it comes to slaws! But I love the idea of the red cabbage and carrots…such a pretty color!

Thanks for the recipe. I too am into salads. It takes some nice pictures. I’m a grand mother already with a 4 year old girl and a 7 month old boy. So, I’m eying up your t shirt for down the line. They grow so fast.
