We love stuffed mushrooms around here… {most of us anyway} I recently made a new version for us and I wanted to share the recipe with you. This stuffed mushroom recipe is a higher protein version that is super tasty as well.
Stuffed Mushrooms with Turkey and Feta
I had a big box of mushrooms from Costco and I wanted to create yummy stuffed mushrooms, but I was also just wanting to eat this for my lunch. These mushrooms are high protein and stuffed with yummy ingredients, eat as a side or as a meal.
In addition to the turkey sausage and feta, I added spinach, green onions, and a bit of breadcrumbs to hold it together. So tasty! Great flavors that blend with the mushroom base for perfection.

How to make high protein stuffed mushrooms
Ready to make this for yourself? I’ll walk through it here, but you can always scroll down to the printable recipe card at the bottom for the simplified version.
Pull out all your ingredients and then pull the stems off all the mushrooms. I used a large Costco size for this recipe which was 22 large mushrooms. If you have a fewer mushrooms you can half the recipe.
Finely chop the spinach and green onions. Cook the turkey sausage for a couple minutes, then add the green onions. Continue to cook the turkey sausage until completely cooked through. As it cooks, break it up into small pieces.
Mix all the ingredients together in a large bowl.
When the turkey/onion mix is finished cooking, add it to the bowl with the other ingredients.
Scoop the mix into the empty mushrooms and press it down. Add a bit more mix on top to finish.
I cooked my stuffed mushrooms in the air fryer for about 15 min at 350 – delicious! I had to cook two batches to do all my mushrooms.
They were so yummy when finished. I ate this whole plate as my lunch the day I made this. YUM!
Turkey Stuffed Mushrooms
This recipe makes 22 large button mushrooms. Half the recipe for a smaller batch of mushrooms.
Ingredients
- Large pack white button mushrooms - around 22
- 1 package -14 oz turkey sausage
- 2 cups spinach - chopped
- 2 large green onions - chopped
- 1/2 cup Feta
- 1 cup Italian panko bread crumbs
- 1/4 cup hot water
Instructions
- Clean mushrooms and take out stems
- Cook whole package of turkey sausage in a pan. Chop up to small pieces. Add green onion to final few minutes of cooking.
- Place the feta, spinach and breadcrumbs in a large bowl.
- When the turkey is mixed, add it to the bowl with the other ingredients.
- Place a spoonful of mix in each mushroom cap and press down. Add a bit more mix on top to finish off. I used my whole bowl of mix with 22 mushrooms.
- Cook for 15 min @ 350 in the airfryer OR 40 min @350 in the oven. If cooking in the oven cook covered for 20 min and 20 min uncovered.
- Enjoy and eat!
