Vanilla Peppermint Scones are the perfect treat to enjoy with coffee! I didn’t drink coffee until I had kids… made it all the way through collage and a busy work environment without it, but when my oldest was a baby I started drinking Starbucks Christmas drinks and haven’t gone back. Now, I love coffee! Any time of year, it’s a great way to start my day. Starbucks Christmas drinks will always hold a special place in my heart {along with my kids, of course!}. I recently made these amazing vanilla peppermint scones with pair perfectly with a cup of Starbucks Holiday Blend AND I can enjoy them both in my house while sitting next to the Christmas tree.
Vanilla Peppermint Scones Recipe –
This is the little guy {not so little anymore} who started the whole coffee craze! We took this last week at our annual cookie exchange. We just love Christmas!
Ok, back to the scones! You have to try these, they are easy to make and so pepperminty. YUM!
I also added peppermint creamer to my coffee, so I was in peppermint heaven this afternoon. The crushed candy canes on top are crunchy and are just the perfect topping.
Have you ever grated your butter? I tried this technique for the first time with this recipe and I may never go back to my old method. Once grated, this butter cuts into the dry ingredients very easy.
Make sure the dough is dry. Scones should be quite dry.
How to make Peppermint Scones with Starbucks Coffee
Peppermint Scones with Starbucks Coffee
Ingredients
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup white sugar
- 5 TBS unsalted butter {70 grams}
- 1/2 cup low fat Greek yogurt
- 1 large egg yolk
- 1 tsp vanilla
- glaze- 1 cup powdered sugar, 1/2 tsp peppermint flavoring, warm water
- 1/4 cup crushed candy canes if desired
Instructions
- Pre heat oven to 400F
- Whisk the dry ingredients together, then cut in the cold butter. I used a cheese grater to grate the butter then cut it into the dry ingredients with a fork. In a separate bowl mix the yogurt egg yolk and vanilla until blended.
- Mix the two bowls together, should form a dry ball. you DO NOT want the dough too moist.
- Put parchment paper on a cookie sheet and press dough to 1" thick. Cut into small wedge shapes. You should have around 10. Depends on how you cut the dough. Do not separate wedges on cookie sheet. Bake 15 mins until cooked through and slightly browned on top.
- While the scones are cooking make the glaze. Mix the sugar with the peppermint, then add water 1 tsp at a time until the glaze is smooth. When scones come out of oven, brush glaze on top of warm scones. Tip with crushed candy canes.
All cut into wedges. Not all are perfect, but they all tasted great!

You’re killing me here. It’s 7:08 AM and I’ve been up since 4 AM and I’m starving. I have a thing for scones, but I don’t think I’ve ever seen any that look this delicious. These would be perfect with my Starbucks Christmas blend this morning. And, BTW, I’ve been drinking coffee since I was in first grade. That’s how I roll. 🙂 Christmas Blend is a fave at my house!
