1 lb potatoes
1 large onion
2 cups cubed, roasted pumpkin
1 TBS olive oil
2 1/2 cups chicken stock
2 1/2 cups milk
3/4 cup dry shell pasta {or other pasta}
2/3 cup cream {I just use more milk to keep it lighter}
2 TBS pesto
salt and pepper to taste
1. Chop potatoes and onion and cook in oil for 12 min. in a large soup pot.
2. Add milk and chicken stock, bring to a boil and simmer for 10 min.
3. Add the dry pasta and simmer another 10 min.
4. Stir in the cream or milk and cook an additional 5 min.
5. Add the pesto, and salt and pepper to taste.
Makes 6 serving
We will be making this roasted pumpkin soup again this fall for sure..
