Hello Nap-Time Creation Readers! I am back again with a great and easy recipe.
Do you love comfort food? We definitely do. This Easy Potato Soup is one my favorite soup and I luckily I always have all the ingredients needed for this soup at home.
It’s still cold here in VA and a big bowl of warm soup is just what we need on these cold days. Finally yesterday we have seen some sunshine and hopefully it will stay around because it was so depressing seeing snowfall in March.
I am totally ready for spring and blooming flowers!
EASY POTATO SOUP
Ingredients
- 2 tbs butter
- 1 medium onion, chopped
- 3-5 slices of bacon, chopped { I love turkey bacon too }
- 5-6 medium potatoes, chopped
- 2 tbs. all purpose flour
- 2 cups chicken broth
- 1 cup water
- salt and pepper to taste
- fresh or dried parsley
- sour creme to garnish
Instructions
- Heat butter in large pan.
- Add diced onions and 2 slices of chopped bacon. Cook for about 5 minutes.
- Add potato cubes, salt and pepper to onions and add 2 tbs flour. Stir together and quickly add cups of chicken broth and water.
- Bring to boil.
- Reduce heat and simmer until potatoes are tender, about 30 minutes.
- Add fresh or dried parsley and cook for another 2-3 minutes.
- Garnish with bacon bits and sour creme.
We love the consistency and rich flavor of this soup. When my boys were babies, I made this soup all the time for them and they absolutely loved it and thankfully they love it until this day. They really enjoy the crunchy bacon that I top the soup with. [ 😉 }
Toast a few slice of bread with it and I guarantee you will lick your fingers!
