I love this new potato salad! I made it last week for our family and it was just amazing. I’m a potato salad fan to being with, and this new Asian Potato Salad is just a fun take on this original summer food. I made a few changes my classic potato salad recipe to add some Asian flavors.

The wasabi adds a fun zing to this salad. You can add more than the recipe calls for if you can handle it. I doubled it, and loved it. My kids weren’t crazy about it, but they did eat it. It would be for the adult table at a picnic.
The sesame seeds at a great little crunch and make it look pretty! They do get a bit soggy if you keep the leftovers, but I ate some a few days later and it still tastes great! This should keep just fine in the fridge for 3-4 days.
