My husband loves lasagna! I don’t make it often enough, but when I do make it, the pan is gone SO fast! I’ve made it with just cheese before, but I also love it with spinach. This is our favorite spinach lasagna recipe!
Cheese is what makes a lasagna great! Using several kinds of cheese, this spinach lasagna has SO much flavor, you won’t be able to stop eating it!
I always thought lasagnas took forever to make with the noodle cooking, than baking, but I make mine without pre-cooking the noodles and the whole thing comes together really quickly. Do you pre-cook your noodles?

Spinach Lasagna Recipe
Ingredients
- 2 cups cottage cheese
- 2 cup ricotta cheese
- {I use low fat of both of these}
- 3 cups Shredded Mozzarella
- 1 box lasagna noodles
- 2-3 cups chunky pasta sauce
- 1 cup thawed frozen spinach
- 1/2 cup Parmesan cheese
Instructions
- Combine: 1 c. mozz, 1 cup ricotta, 1/2 cup parm, 2 cups cottage cheese, 1 cup sauce, 1 cup chopped frozen {thawed} spinach
- in a 9x9 pan... Layer sauce, uncooked noodles, the cheese mixture, sauce, noodle, cheese mix, sauce, noodle... continue until the top of pan. Finish with the rest of the mozzarella cheese. Sprinkle with some Italian seasoning...
- Bake at 400 degrees F. 30 min. covered, 15 min uncovered
Here’s my cheesy mix…The cottage cheese keeps the lasagna light and not too heavy. It is also really creamy with the blending of the other cheeses.
The real test is to only eat one piece! I wanted to eat the whole pan… I was totally eating bites from the pan while shooting these photos!
Do you have a favorite lasagna recipe? I’ve never made lasagna with meat… i just prefer it with cheese and veggies, but I’m thinking my boys would love some meat…

This looks yummy. I am actually making it for dinner tonight. But 1 question: is it 2 cups ricotta or 1? Ingredients list 2 cups, 1 cup is mentioned in directions. Help!
