My husband and I are just a little bit curry crazy. Our favorite food to eat out is Indian food. I’ve been trying to perfect a few more at home recipes that can give us our curry fix. This easy beef curry is perfect for our whole family because I add a bit more spice for the adults and a bit less for the kids and everyone is happy! This is a tomato based curry filled with beef, potatoes and peas. The best part is that the leftovers are better than the original!
This easy beef curry is perfect served over brown with Roti on the side. You can find it in the freezer section of many large stores. This bread is my kids favorite part of thea meal, although we all love it with the curry.
If you find easy beef curry a bit to spicy you can add a dollop of plain Greek yogurt on top… it’s the most amazing topping and adds a cooling touch to the curry.
Yep… a bit of curry, rice, roti, yogurt all together… pretty amazing… almost as good as going out.
Easy Beef Curry Recipe
Ingredients
- 2-3 TBS oil {coconut is recommended}
- 1 cup chopped onion
- 1 clove garlic { I used minced 1 tsp}
- 1 lb ground beef
- 1 1/2 TBS curry powder {I like a bit more, but this measure will give a mild curry flavor}
- 2 tsp salt
- 1/8 tsp pepper, cinnamon, ginger powder, turmeric powder
- 2 1/2-3 cups chopped tomatoes {about 1 1/2 cans}
- 3 potatoes
- 2-3 cups frozen peas
Instructions
- melt the butter and add the garlic and onion. Cook until the onion softens and the garlic starts to brown. Add the meat and cook thoroughly. Add curry, spices, and salt, stir. Dice the potatoes and add to the meat mix. Add the tomatoes and peas to the pan. Bring to a low boil, reduce heat, cover and simmer for 25 min or until potatoes are soft. Serve over brown rice with greek yogurt for garnish. Cook frozen roti and serve on the side.
