Make amazing potatoes with feta and basil on the grill for an easy summer side dish. These grilled potatoes are so easy to make and really any meal better. We’ve been grilling out as much as we can this summer. It keeps the house cooler and I love so many of the fresh veggie recipes I’ve been trying on the grill. If you like potatoes you have to try these grilled potatoes. Both the sweet and white potatoes with feta and basil were truly delicious.
Potatoes with Feta and Basil –
I have been grilled ALL the veggies on the grill this summer! Artichokes, broccoli and brussels sprouts have been made many many times. I’ve also grilled both sweet potatoes and white potatoes weekly, but I added a little extra zing with the flavoring last week.
We’ve got basil coming out our ears this time of year in the garden, so I knew I wanted to do something with basil. We also all LOVE feta cheese so I thought I would try the combination. Ah, it’s SOOO good. I also added a bit of garlic salt and olive oil for grilling perfection.
So here’s what my foil packs looked like before then went on the grill. Potatoes, garlic salt, feta, chopped basil, then drizzle on olive oil to prevent sticking and burning. Pre-heat your grill to hot, then cook for 25-30 min at med-hot for crunchy, delicious potatoes every time.
After you add the olive oil I roll up the middle and pinch the end to create a little packet.
After about 15 min {half way} I open up the packets and stir the potatoes to mix flavors and avoid bottom burning.
After 25-30 min you can remove from the foil packets and serve! YUM! Grilled potatoes with feta and basil that everyone will love.
Grilled Potatoes with feta and basil
Ingredients
- 8 small potatoes
- 3 med sweet potatoes
- 1/4 cup feta
- 5 leaves basil
- 1 tsp garlic salt
- 2 TBS Olive oil
- tin foil
Instructions
- tear a large piece of grilling grade foil. Chop potatoes into bite size pieces. {peel the sweet potatoes}. Place potatoes on foil and sprinkle with garlic salt. Add feta and basil {I cut my leaves with a scissors} Add olive oil, mix slightly and fold up foil into a packet. Pre-heat grill to hot, then reduce slightly to med-hot. Place packets on grill. After 10/15 min remove from heat, open and stir. Place back on heat until totally cooking time is 25/30 min or potatoes are cooked to just soft. Remove from foil and serve.
