I think this will be my final Easter idea of the year. And I’m happy to finish with this cute Easter Bunny Parfait. It was simple to make, fun to create, cute to look at, and super YUMMY to eat! {the boys loved it!} For my boys, decorating for Easter means getting this Easter bunny out of the box. We got him as a gift when Jack was just a baby, so he’s been part of every Easter the boys can remember. I’ve used him as my inspiration for this fun and healthy Easter treat.When the boys were little this bunny freaked them out a bit, I love looking at these old photos! The Bunny sings and wiggles and puts on a cute little show. Here are my boys… Easter two years apart…
Okay, now onto the recipe. The parfait is just layers of vanilla Greek yogurt, Honey Nut Cheerios, and peaches {in their own juice, not syrup}. I topped this little number with a color bunny pancake! You can use this waffle recipe or this pancake recipe {minus the apples} for the base. Add a little food coloring and you are ready to go. I used a spoon to shape the bunny. Scoop one circle in the pan, then another on top, followed by two small spoonfuls for the ears. Make the batter just a bit thicker than normal so it will hold the shape.
I was able to make a very small one after a few tries and she looks really cute sitting on my parfait. {I’ll call her a she since it’s purple!}
The boys were happy that I had so many other pancakes. Seriously… these two are cute, but they can’t take a good picture together!!
You could top this with a few egg m & m’s for another tasty variation…

These are so cute! I wish we’d lived in the US when my boys were smaller, I didn’t get to do this kind of stuff for them. I don’t care if my baby will be 16 when we get there next year, he’s going to get his first visit from the Easter Bunny anyway 🙂

These look so cute! I am horrible at making pancakes, even round ones. I consider myself a decent cook, but I can’t seem to get the trick of pancakes. Thanks for pointing out that it’s better to have the fruit in their juice than the syrup. I wish the companies would take a tip from moms and make more fruit juice canned fruit options. I can’t seem to find the mandarin oranges in just juice or water.
