Easy Vegetarian Fajitas

This recipe is very easy and these fajitas have gotten me through many times in my life. I love Mexican food, and I don’t eat meat, so this combination is perfect for me. Of course, you can easily add chicken or beef and make this a meat fajita!

We also have a favorite Guacamole recipe:

Easy Guac:
2 ripe avocados. smashed
2 tbs mayo
3tbs salsa
1 tbs minced garlic
1/2 tbs garlic salt
1/2 tbs lemon juice
{yep, its that simple and its amazing!!!}
Here are the ingredients:
 I take the onions and peppers and saute with a bit of Taco Seasoning in olive oil in a pan. Cook until just soft. Spread warm re-fried beans on a whole wheat tortilla, add the onions and pepper mix. Top with Black beans, Grated Cheese, and chopped black olives.  If you cook a whole pepper and onion it will make about four servings. Serve with some lettuce and baked doritos… out whole family loves this meal… although I do make some seasoned chicken for the boys.
