Its my favorite time of year for baking! Pumpkin and Apples… heavenly {sigh…ha!} Today I’m sharing Apple Cupcakes with Salted Caramel Frosting… oh yes… amazing!!! I shared the recipe for the frosting earlier this week – you can find the link below if you need it. Grab the recipes and get baking!
Apple Cupcakes Recipe
Did you see the recipe I shared earlier this week? The salted caramel cream cheese frosting recipe here, is the perfect companion to this recipe.
Also, these cupcakes are a must-make because they are literally bursting with apples! Can you see all the apple bits? These are SO good, with or without the frosting!
Fall baking has the best colors! The fruit, the spices… all beautiful!
These cupcakes have TWO whole apples in them.. that’s 1/6th of an apple in every cupcake.
Don’t worry if the batter seems half apple and half flour.. it seems like a lot of apples, but when they bake it’s just perfect.
Spoon the batter into 12 baking cups. Bake for around 20 min, but make sure that you check with a tooth pick, I had to bake mine about 5-7 min longer, but it could have been the altitude here.
When the apple cupcakes come out of the oven you can eat them just like this… put on some butter and enjoy! The caramel frosting recipe I shared above is also AMAZING!
Apple Cupcakes recipe with caramel frosting
Ingredients
- 1 cup of sugar
- 1 egg
- 1/4 cup of softened butter
- 1 cup of flour
- 1 tsp vanilla
- 1 tsp apple pie spice
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 finely chopped apples
Instructions
combine the flour, salt, baking powder, apple pie spice.
cream together the butter and sugar add in the egg and vanilla
mix in the flour and other dry ingredients into the creamed sugar
fold in the apples
bake in liners @350 for about 20 minutes {test to see if toothpick comes out clean, bake longer if needed}
makes 12 cupcakes
cool completely before frosting
Use this Caramel Frosting for the perfect topping.
