I really love jalapeno poppers. I mean LOVE them! My mom makes the best ones with peppers from her garden. Today I’m putting a little twist on my mom’s recipe by adding bacon and baking these tasty morsels – you won’t even notice they aren’t fried. These Baked Bacon Jalapeno Poppers are that good!
You can add your favorite dip, or just eat them plain, but each bacon wrapped bite is full of flavor and just the right amount of heat. I also love how the cream cheese balances out the spice. Even my kids will eat these, they love dipping in lots of sauce. {We just use red pasta sauce}
OK… Here’s what you need to get started. Wright® Brand Bacon – which if you haven’t tried is definitely Bacon The Wright Way™. Wright Brand Bacon comes in thick slices, is hand-selected and naturally smoked, AND is made in a variety of flavors including Applewood Smoked, Smoked Brown Sugar, Bourbon Barrel Smoked and Oak Barrel Smoked.. We bought our Hickory Smoked flavor at our local Ahold Store- Giant, to use for this recipe. You can find it with other bacon/breakfast sausage at your local Ahold Store.
Cook the 8 stripes of bacon in a fry pan until just browning. Prepare 1 egg {beaten}, 1/2 cup panko bread crumbs with 1/4 tsp of paprika mixed in, 2 TBS cream cheese, and 4 jalapeno peppers cut in half and cleaned of the seeds. Place the peppers on a greased baking sheet and cook for 10 min at 375F/180C. When we bake them the second time it’s not long enough to cook the pepper. {this serves 4}
Turn your oven up to 425F/220C. Spoon a bit of the cream cheese into the pepper.
Wrap with a piece of bacon. {this is why you don’t want to cook too much, it needs to bend around the pepper}
Dip first in the egg {your hands will get messy!} then roll in the bread crumbs.
I stuck a tooth pick in each one to hold it all together. Place on a greased cooking sheet. Spray with baking spray to help the bread crumbs get crispy. Bake for 7 min at 425F/220C.
YUM! right?
You can now remove the toothpick if you want and it will all stay together neatly. Dip or just eat warm. YUM! Crispy bacon, melty cream cheese and a bit of spicy pepper, each bite is perfect.
