Do you leave cookies for Santa at your house? I’m always pretty sugared out by the time the actual day arrives, BUT, if you are one who likes to put cookies out for the jolly fellow, THESE chocolate mint cookies would be a hit with him, I’m sure!
These cookies are made with melted chocolate chips {so rich!} and topped with an Andes Mint! Yep, very very yummy. I’ve made them before with the red Andes Mints too, those are also festive!
Chocolate Mint Cookies {for Santa?}
Ingredients
- 2/4 cup butter
- 1 cup packed brown sugar
- 2 TBS water
- 2 cups semi-sweet chocolate chips
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1 box Andes Mints
Instructions
- In a large pan over medium heat, begin melting the butter, then add sugar and water and stir well. Add chocolate chips and continue to stir until mostly melted. Remove from heat and continue to stir until all melted. Pour into a mixing bowl and let sit 10 min too cool off.
- With an electric mixer beat in the eggs, one at a time in to the mixture. Reduce to lowest speed and add dry ingredients, flour and soda. Chill dough in refrigerator for 1 hour.
- Preheat oven to 350F {175C}
- Form small balls and place on a slightly greased cookie sheet. Make sure they are 2" apart. Bake 8-10 min. While cookies are in the oven, unwrap the mints. When cookies come out, put 1 mint on top of each one {half a mint if your cookies are small} Let the mints sit 5 min to melt, then spread with a spoon to swirl around. Place on a rack to cool, let completely cool then eat, then store in an air-tight container... if they make it that long!
With the melted butter, these roll into nice balls for baking.
Spread the mint around a bit.
Let cool completely so you can stack them for storage.
Take to your next Christmas party or leave a plate for Santa this Christmas Eve.
