Fall is birthday season for our home. All three kids have fall birthdays. I always let them choose a cake… and this year my son asked for a berry cake.. {better than the year he asked for pineapple upside down cake, HA!} Anyway, I came up with this cream cheese berry frosting to put on top of a white box cake for a delicious and amazing birthday cake.
This may look like a gourmet cake for a 8 year old, but my son is a total foodie! {his brother, however, is not.. haha} SO he LOVED this cake with Cream Cheese Berry Frosting and was thrilled with the outcome. So was I as this cake was actually pretty easy!
In addition to 1 white box cake you will need this fresh ingredients… 2 small packs of blueberries {or 1 large} and 2 cups of chopped strawberries. 4 oz. of softened cream cheese, 1 cup of frosting sugar, 2 TBS butter and 1 TBS vanilla.
For the compote sauce you will need both berries, water, sugar and a bit of cornstarch… recipes is below… Most of the berries are made into the sauce, but some are actually mixed into the cream cheese frosting. The combination of these two is what makes the cake so amazing.
I baked the cake in 2 round 9″ pans. Trim the top of one cake to flatten, this will be the middle layer.
Spread a layer of the cream cheese frosting on top of the first layer. Add a few spoonfuls of the berry sauce. Place the second cake on top, then spread the remaining berry cream cheese frosting and berry sauce.
Yep, then it looks like this… YUM!! Place in the refrigerator for a few hours to firm up the frosting.
Cream Cheese Berry Frosting
Ingredients
- 2 small packs bluberries {or 1 Medium one}
- 2 cups chopped strawberries
- Set aside 1/2 cup of strawberries and 1/4 cup of blueberries.
- Bake cake in two 9" round pans. Cool
- put remaining berries in a small sauce pan. Add 1/2 cup water and 2 TBS sugar {more if desired} bring to a boil, then reduce to simmer. Simmer for 15-20 min. Add 1 TBS of cornstarch, small bits at a time. Continue to cook until sauce is thickened. Remove from heat and mash with a hand masher or mixer blade. Smash berries into small bits.... set aside
- Blend with a mixer the cream cheese, frosting sugar, vanilla and butter. Fold in the set-aside berries. Beat on high for 1 Min.
- Flatten the top of one cake, spread the frosting and spoon berry sauce on top. Add the second cake. Frost with remaining frosting and top with berry sauce. Refrigerate for at least 2 hours to firm up frosting.
Cut a big slice and enjoy…I’m wanting another piece just writing about it.
