Stuffed Mushrooms are a Christmas food to me. Growing up when would spend Christmas Eve at my Grandmother’s house. She would always make stuffed mushrooms. When I was younger, I didn’t really care for them, but I grew to really like them and look forward to having them each Christmas Eve. When Grandma started to slow down with age, I began to go over on Christmas Eve morning and help her to make all the food that she wanted to prepare for the family. The stuffed mushrooms were the most time consuming recipe we made. Grandma did give me the recipe to her mushrooms before she passed away…. but I’ve never actually make her full version, because soon after I got married, I tried this easy stuffed mushrooms recipe, adapted a few things and came up with this amazingly easy stuffed mushroom recipe that only takes 10 min. prep and {I think} tastes as good as Grandmas MUCH longer prep version.
I love the way the stuffing gets crunchy on top and the mushrooms get all soft and chewy. I’m big on food being the right texture {I cannot do runny eggs!!!} but this combination works for me…
I don’t love many mushrooms, but I do like these white button mushrooms. They are generally easy to find and affordable as well, which really makes this dish a winner.

Easy Stuffed Mushrooms
Ingredients
- 10-12 white button mushrooms {depending on size}
- 1/2 cup panko bread crumbs {Italian seasoned}
- 1/4 cup Parmesan cheese
- 2 TBS Olive Oil
- hot water to mix
Instructions
- Mix the crumbs, cheese and oil. Add the hot water until the mixture is all combined, but not soggy. You should be able to pack the crumbs into a ball and it stays.
- Heat oven to 375
- remove the stems from the mushrooms and clean. Place bottom up in a pan. Fill to heaping with the crumb mixture.
- Cover with foil and bake 30 minutes. Uncover and bake another 15 min. or until the mushrooms are soft and the crumbs are crisped on top.
I can eat SO many of these!! yum yum they go right down. I like to serve these with pasta or salad for dinner. I make them every few months, because they are so easy to make, I don’t have to save it for a special occasion.
