I’ve played around with using zoodles {zucchini noodles} instead of noodles a few times over the past few months. I bought a veggie spiral-er thing, but it’s just a little one and it actually takes a long time to make enough zoodles for the whole family. I thought I would try a faster way to make the zoodles and came up with this technique for fat zoodles that is fast, easy and tastes great. Pair the fat zoodles with your favorite pasta toppings and sauce and enjoy!
The great thing about this technique is that you don’t need any fancy equipment, just a veggie peeler. I washed my zucchini, then held it right over the pan while using the peeler to slice off the zucchini. Rotate while peeling and do one end, down to the seedy core, then flip over and peel the other end. I do not use the very center of the zucchini because it’s softer and full of seeds.
I added sauteed mushrooms and shrimp for some protein and texture. The whole family gobbled it up.
For the sauce I used some store bought tomato sauce mixed with my “lighter alfredo sauce recipe” for a tomato cream sauce that’s full of flavor, light on the calories.
I still find it takes a lot of zucchini to feed the whole family, but it takes me less time to prepare with this method. How about you? Any tips for making zoodles? Have you tried this pasta alternate? How does it go over with your family?

This looks so yummy! I usually make zucchini linguine with a veggie slicer but slicing them takes so long. I’ll have to try this technique!
