I’ve been trying to eat less and less grains over the past year, but with three kids its been hard to find foods we all love that fit my eating choices. I’ve been eating with a modern mindset – not so much fad eating, but healthy ways I can sustain long term. I also am trying to find foods that I not only want to eat, but also that I love to eat. Finding Modern Table® lentil-based pasta has been a win for our whole family and is for sure the best gluten free pasta I have ever tried.
With grilling season in full swing here is a tasty grilled veggie pesto pasta recipe the whole family will love.
Grilled Vegetable Pasta with Pesto and Chicken
I ended up adding some chicken to this as well, which was easy as I grilled everything. My husband likes some meat with his pasta, but I ate my serving without the meat and it was delicious as well. I love this recipe because you really can customize to the veggies you want to add.
I purchased the Modern Table® Rotini at my local King Soopers store for this recipe. You can pick up all the fresh veggies and meat at the same time. This pasta is a complete plant-protein: the protein in this pasta contains all 9 essential amino acids, which are the building blocks your body needs for lasting energy, muscle health and good digestion, it’s also certified gluten-free and non-GMO project verified.
The best part of this recipe {for me} was that I was able to grill everything! Our grill has a side burner and I used that to boil the Modern Table® protein pasta at the same time I was grilling the veggies and chicken.
To grill the veggies I simply sprayed with a bit of cooking oil, then placed directly on the grill. Each vegetable was a bit different for the time, but the mushrooms were the fastest and the peppers took the longest. I grilled a whole chicken breast to complete the meal. You can find the complete cooking times in the recipe card below.
When the veggies came off the grill I sliced into bite size pieces before adding to the cooked pasta.
Pour the pesto sauce over top of the veggies and pasta, then stir together.
Slice the grilled chicken and add to the top of the serving bowl. The recipe shown here serves four.
You can add any vegetables that you want to this dish.
